摘要 综述了近几年国际上新兴起的一类肉味香料——1,4-二噻烷及其衍生物的品种、香气香味特征、应用领域,介绍了每种化合物各自的合成方法. 1,4Dithiane and its derivatives are new series of meat like flavor in the world. The variety of 1,4dithianes, odor and taste characteristics and applications in food were reviewed. The syntheses of 1,4dithianes are introduced.
