摘要
综述了近几年国际上新兴起的一类肉味香料——1,4-二噻烷及其衍生物的品种、香气香味特征、应用领域,介绍了每种化合物各自的合成方法.
1,4Dithiane and its derivatives are new series of meat like flavor in the world. The variety of 1,4dithianes, odor and taste characteristics and applications in food were reviewed. The syntheses of 1,4dithianes are introduced.
