摘要
[目的 ] 了解本市现有巴氏杀菌乳产销卫生状况 ,提出进一步规范本市现有巴氏杀菌乳生产、运输及销售行为的监督管理对策。 [方法 ] 对本市现有巴氏杀菌乳生产企业及产品生产、运输、销售卫生状况和冷链配备等情况进行现场调查 ,对巴氏杀菌乳产品抽检结果按GB5 40 8.1-1999规定进行评价 ,并对调查和评价结果进行非条件Logistic逐步回归模型统计分析。 [结果 ] 本市现有巴氏杀菌乳生产企业卫生状况参差不齐 ,产品以玻璃瓶和塑料袋包装为主 ,未完全做到从生产、储运到销售过程的冷链配备 ,且产品的抽检合格率与产品生产过程中的灌装形式、CIP程序控制冷链和产品包装形式有关。 [结论 ] 通过推广实施GMP规范和HACCP管理体系 ,改进现有生产加工过程控制水平和运输销售过程中的冷链配备条件 ,确保巴氏杀菌乳卫生质量的稳定。
To understand the sanitary status of production and marketing of the current pasteurrized milk in Shanghai in order to put forward supervisory management measures to standardize the production, transportation and marketing of pasteurrized milk in our city. The sanitary status of production, transportation, marketing and the cold storage chain of the current pasteurrized milk in our city were investigated. The data of inspected pasteurrized milk were evaluated according to GB5408.1-1999. The result of investigation and evaluation were analyzed by unconditional Logistic regression model. The sanitary status of current enterprises producing pasteurrized milk in our city differed very much. Most products were wrapped in plastic bags or filled in glass bottles. The cold chain from production, transportation, storage to marketing was not complete. The eligibilily rate of product inspection was related to the manner of CIP procedure control, fill, pack and cold storage chain. [Conclusion] The GMPs and HACCP system should be pushed all-around such as to perfecting the control level during production and cold storage chain in course of transportation and marketing in order to insure the stability of sanitary quality of the current pasteurrized milk in our city.
