摘要
将魔芋葡甘聚糖应用于去皮芋头的涂膜保鲜中 ,结果表明经 0 .2 %维生素C、0 .2 %柠檬酸、0 .5 %连二亚硫酸钠护色液处理后的芋头 ,清洗后再用 0 .4 %涂膜液处理 ,能使芋头在室温下贮藏期达 9天 ,真空包装后可贮藏 2 0多天之久。
The test study the application of knojac gulcomannan on coating taro without skin.The results show that:the taro can be stored for 9 days in the usual condition and more than 20 days with the vacant packing,by soaking the taro in 0.2% vitamin C,0.2% citric acid and 0.5%sodium hyposulfite solution, and then dippingit in 0.4% knojac gulcomannan coating solution after washing.
