摘要
红曲的研究方兴未艾,中国、日本、韩国、泰国、美国、法国众多学者潜心研究,使红曲成为世界性的话题。有研究表明,红曲霉与乳酸菌、酵母菌或其他真菌混合培养,有利于提高红曲色素产量。红曲的应用领域也越来越广泛,不仅可用于白酒的增香、黄酒的提质,还可用于食品、医药等行业。中国的红曲产业尚存在不少问题,在红曲菌种的选育、先进的生产工艺与科学管理、红曲系列产品的研究开发等诸多方面,急需研究解决。(丹妮)
The red starter research,a worldwide hot topic,attracted th e interest of many scholars in China,Japan,South Korea,Thailand,United State s and French.The latest research indicated that mixed culture of monascus coupl ed with lactobacillus,mi-crozyme and other epiphyte would increase the outpu t of red starter coloring matter.The expanding application domain of red start er was not only in the field of aroma-producing of liquors and quality improvem ent of yellow rice wine but also in the field of food and medicine.However,s ome existed problems was in urgent need of solution in red starter field in C hina such as breeding of red starter bacteria species,management of advanced p roduction techniques and science,and research and development of red starter s erial prod-ucts etc.(Tran.by YUE Yang)
