错流膜过滤提高黄酒非生物稳定性的研究 被引量:16

摘要 以国产错流膜过滤装置在14℃左右进行黄酒过滤试验。经孔径为0.18μm膜过滤后的酒蛋白质下降17.3%,OD值下降16.0%,总多酚略有下降,黄酒的非生物稳定性明显提高,且理化指标符合标准要求,保持了黄酒的传统风味。 Homemade cross-flow membrane filtration apparatus was used for f il tration test of yellow rice wine at14℃.As for the ap-paratus with bore dia meter as0.18靘,the protein content and OD value dropped by17.3%and1 6.0%respectively and the content of total polyphenol dropped slightly.On t he other hand,the non-biological stability of the wine improved evidently and the physio-chemical indexes were in accord with the standard requirements and t he traditional flavor of the wine remained unchanged.(Tran.by YUE Yang)
