从马蹄叶茎中可以提取出具有对细菌、酵母菌和霉菌较强的抑菌物质 ,它对细菌的抑菌能力比对酵母菌和霉菌强。这种抑菌物质比苯甲酸钠的抑菌能力高 ,它的热稳定性较好 ,经 12 1℃高温处理 15min后 ,仍具较强的抑菌能力。
An antimicrobial agent was extracted from the stem of water chestnut with water, acid, or ethylalcohol. Further studies showed that this antimicrobial agent could inhibit bacteria growth more effectively than that of yeast or molds. It is heat stable and stronger than sodium benzoate as an antimicrobial.
