摘要
主要介绍了玉米淀粉磷酸酯在面粉、粉丝和挂面中的应用 ,试验结果表明 ,玉米淀粉磷酸酯能提高面粉的湿面筋含量 ,并能提高粉丝和挂面质量。
The applications of phosphate corn starch phosphate in flour gluten fortifier, vermicelli, and hang noodles were studied. The results showed that phosphate corn starch increased the moisture content of wheat flour and qualities of vermicelli and hang noodles were also improved.
