摘要
以Fe3+,Zn2+,Ca2+为矿质营养强化剂,以ICP-AES法,研究在大豆芽制备过程中,利用自身生物活性效应,吸收强化3种矿质元素特征,结果表明,随着Fe3+,Zn2+,Ca2+浓度的增加,尽管大豆发芽率、发芽势和芽长均不同程度地受到抑制,但大豆芽中Fe3+,Zn2+,Ca2+含量却明显增加,强化效果显著,Fe3+,Zn2+,Ca2+低浓度时强化效果较好.3种矿质元素强化互作效应存在差异.
Fe3+, Zn2+, Ca2+ as mineral nutrient matter are abserbed by soybean sprout depending on itself biological activity for providing the contents of these metols in it. Its strengthened characteristics of absorbing metals were studied by using ICPAES method. The results showed that contents of Fe3+, Zn2+ and Ca2+ increased clearly and reinforcement effects were striking with increase of Fe3+, Zn2+, Ca2+ concentration, though germination percentage, germinating energy and bud length of soybean were restrained, Fe3+, Zn2+, Ca2+ contents in soybean sprouts increased clearly, showing striking reinforcement effect. Soybean sprouts ware reinforced Fe3+, Zn2+, Ca2+ with low concentrations, the effect was better. There was difference in interaction effect of reinforcement among three mineral elements.
