摘要
灰树花 (Grifolafrondosa)是一种珍稀食药兼用真菌 ,具有极高的营养价值与医疗保健功效。研究了灰树花发酵饮料的生产工艺、配方和稳定性等。结果表明 ,添加 6 0 %灰树花发酵匀浆滤液 ,6 %复合甜味剂 ,0 3%柠檬酸 ,0 13%复合稳定剂时 ,饮料风味最佳 。
Grifola frondosa was a rare edible and medicinal fungus with high nutritional and medicinal and healthy functions.The processing technique,formula and stability of fermentation drink of grifola frondosa were studied.The result showed that the drink adding 60% of fermented liquor,6% of mixed sweet agent,0.3% of citric acid,and 0.13% of mixed stabilizing agent had a excellent flavor,taste and stability.
