壳聚糖对苹果汁澄清效果的研究

Effects of Chitosan on Clarification of Apple Fruit Juice

用壳聚糖对苹果汁进行澄清试验的结果表明 ,壳聚糖用量为 0 .5～ 1.2g·L-1、温度 4 5～ 5 5℃、pH 2 .5～4 .5的工艺条件下澄清苹果汁 ,透光率达 97%以上 ,果汁中的可溶性固形物含量基本不变。正交试验后 ,壳聚糖对苹果汁澄清的最适工艺条件是 :壳聚糖用量为 0 .3g·L-1,温度为 4 5℃ ,pH为 4 .5。

The clarification of apple juice by means of chitosan was studied. The results showed that the transmittance was over 97% and soluble solid content was stable basically on the technological conditions that chitosan at 0.5-1.2 g·L -1 , temperature at 45-55℃ and pH 4.5. After the orthogonal trial, the optimum technological conditions of apple juice clarification by using chitosan were 0.3 g·L -1 chitosan, 45℃ and pH 4.5.
