摘要
苦荞麦营养成分独特,现代医学表明苦荞麦在治疗高血压、冠心病、糖尿病、防止内出血、抗癌、延缓衰老等方面具有独特的营养和药用价值。该研究以苦荞籽粒加工过程中总黄酮含量、芦丁含量、抗氧化性、感观质量为指标,对苦荞保健茶加工工艺进行探讨,得出最佳加工工艺。
Tartary buckwheat has very high nutrition, science has confirmed that tartaricum buckwheat has the nutrition and medical value to treat hypertension coronary heart disease diabetes, to prevent internal hemorrhage, to resist cancer and to put off senility. This research studied the technology of tataricum buckwheat healthful tea, with the change of the content of rutin and flavonoids and antioxidant activity and the sensory index in the process.
