摘要
对 2 0匹不同年龄、不同性别的伊吾马放牧肥育、屠宰试验、肉品质分析结果表明∶随年龄的增长 ,增重明显下降 ,屠宰率、净肉率、肉骨比增加不明显 ,而内脂比例明显上升 ,特一级肉比例明显下降。肉、脂成分中水分、蛋白质、灰分、不饱和脂肪酸、人体必须脂肪酸含量明显下降 ,而脂肪、饱和脂肪酸、胆固醇含量明显上升 ;
This paper reported that the results for testing pasturing,fattening and slaughtering and the analysis of meat on twenty Yi Wu Horses of different ages and sexes showed that the finishing result, high grade meat ratio, meat quality and economical result reduced with the increasing in age; Sex affected the finishing result and the fat content in meat.
