摘要
以黑穗醋栗 (布劳德 )叶片为试材 ,采用烘箱贮存法测定了该叶片提取物黄酮类物质在猪油中的抗氧化活性并与一些合成的抗氧化剂进行了比较。结果表明 ,布劳德叶片黄酮提取物具有一定抗氧化效果 ,且随着添加量的增加 ,抗氧化作用呈上升趋势 ;增效剂 Vc与提取物混合使用呈现一定的增效作用 ,而 CA(柠檬酸 )无增效作用 ;抗氧化顺序为 0 .0 2 %槲皮素 >0 .0 2 % PG>0 .0 2 % BHT>0 .4 0 %提取物 >0 .0 5 %提取物 +0 .0 5 % Vc>0 .2 0 %提取物 >0 .10 %提取物 >0 .0 5 %提取物 >0 .0 5 %提取物 +0 .0 5 % CA>0 .0 2 %提取物 >
Antioxidant activities of different addition amount extracts of leaves from black currant (Brodtrop) in lard were measured by the Oven Storage Test.The results indicated that the extracts of the leaves exhibited strong antioxidant activities on lard,and increasing with the addition amount of the extracts raising.There was antioxidant synergy between vitamin C and the extracts,however,citric acid had not creasing effects.The antioxidant activities decreased in the order of 0.02%quercetin>0.02%PG>0.02%BHT>0.40%extracts>0.05%extracts+0.05%Vc>0.20%extracts>0.10%extracts>0.05%extracts>0.05%extracts+0.05%CA>0.02%extracts>control.$$$$
