目的介绍谷胱甘肽的现代研究。方法查阅近些年国内外关于谷胱甘肽研究的相关文献,并对其中的55篇文献进行整理、归纳总结。结果与讨论谷胱甘肽是一种三肽化合物,在大多数的生物体内都存在,并且因其谷胱甘肽本身所具有的特性,在国内外很多领域上都有广泛的研究与应用。作者将从谷胱甘肽的结构与理化性质、制备、测定方法、生理功能、在临床与食品上的应用等方面详细地介绍谷胱甘肽,使研究者能够更加充分地认识到谷胱甘肽的研究价值,总结谷胱甘肽的研究现状以及谷胱甘肽所具有的研究前景。

Objective To introduce the modern research on glutathione.Methods A total of 55 related literatures on glutathione research at home and abroad were reviewed and summarized.Results and Discussion Glutathione is a tripeptide compound that exists in most organisms.And glutathione has been widely used in many fields at home and abroad because of its properties.This review will introduce glutathione in detail from the structure and physical and chemical properties,preparation and determination methods,physiological functions,clinical and food application,which enables researchers to more fully realize the research value of glutathione.In addition,the research status and the research prospects of glutathione are summarized.
