摘要 通过对脂肪酶的氨基酸组成、催化中心的构成特点和晶体结构等最新研究成果的综述 ,阐明了脂肪酶的结构特征。重点讨论了脂肪酶的化学修饰 ,尤其是在修饰方法和修饰机理方面的研究进展。 This review attempts to provide a rough updated compilation of the studies reported in the literature pertaining to the structural characteristics of lipase, especially for composition of amino acids,composing characteristics of catalytic center,crystal structure etc.Highlights were given to the developments of chemical modification which focusing on the modification methods and activation mechanism.The application of the chemical modification of lipase in biotechnology and food engineering fields was also looked into.
