根据国内外研究资料介绍了关于小麦淀粉的分离提取工艺、研究分析方法、颗粒结构及组成、小麦淀粉的遗传及其与小麦品质关系等方面的研究概况。
It has an important influence to wheat starch on processing quality and eating quality of wheat,and the quality of wheat starch is better than corn starch . The study of wheat starch have become an important object in the field of wheat breeding and cereals and oils processing .This paper outlines the researched results about the extract technology, study content and method, the structure of starch granules and compose, and genetic law of wheat starch as well as the relationship of wheat starch to the qualities of the wheat at home and abroad.
