摘要
据报道染料木苷(genistein)是12种大豆异黄酮中抗癌效果最好的一种,为了充分利用大豆资源,提高其利用价值,探讨了在脱脂豆粕中用酶水解法提高染料木苷含量的作法,即将以糖苷形式存在的三羟基异黄酮葡萄糖苷(genistin)酶解为以非糖苷形式存在的染料木苷。结果表明,最佳酶水解条件为:pH5.0,50℃,保温1h,同时还表明,酶水解法提高脱脂豆粕中染料木苷含量是提高大豆综合利用价值的有效方法。
Among the 12 kinds of isoflavones, genistein is reported to be the one that has the best anticarcinogenic effect. As an attempt to make full use of soybean resources and the anticarcinogenic value of soybeans, this paper converts genistin in the glucoside form into genistein in the aglucone form by a βglucosidase enzyme hydrolytic activity. Results show that the optimum conditions for the conversion are as follows: pH 50, 50 ℃ incubation temperature and 1 h incubation period. It is concluded that the proposed method is an effective way to increase the content of genistein and make comprehensive use of the values of soybeans.
