摘要
目的 :建立食品中硝酸盐的快速测定方法。方法 :用锌粒作还原剂 ,在银离子催化下将食品中的硝酸盐还原成亚硝酸盐 ,然后按亚硝酸盐的测定方法测定。结果 :该方法的相对标准差低于 5 % ,平均回收率 94 0 %。结论 :运用该方法能对食品中的硝酸盐进行准确而快速的测定。
Objective:Developing the method that used to determine the nitrate content in food rapidly.Method:The nitrate in food was reduced into nitrite by the zine particle with the Ag+ as the catalyst.Result:Coefficient of variation of the results was below 5%.The average recovery was >94%.Conclusions:The application of the method can determine the nitrate in food rapidly.
