摘要
研究了合肥市 6个蔬菜市场出售的主要蔬菜品种中硝酸盐和亚硝酸盐的污染现状。结果表明 :在被调查的 5类 17种蔬菜中 ,硝酸盐含量依次为叶菜类 >豆类 >根茎类 >茄果类 >瓜菜类 ,硝酸盐污染轻的占 5 2 9% ,污染中等的占 35 3% ,污染重的占 11 8% ;亚硝酸盐含量普遍较低 ,均未超标 ,含量依次为叶菜类 >豆类 >茄果类 >瓜菜类 >根茎类 ;同一蔬菜 ,叶片中硝酸盐、亚硝酸盐含量高于叶柄中。
