摘要 主要论述了啤酒中二氧化硫的代谢机理 ,二氧化硫抗氧化作用的分子生物学研究以及抗氧化啤酒酵母选育的进展。 This paper mainly indivicates the sulphite metabolism, the progress of molecular biological study on sulphur dioxide of beer to antioxide and the progress of antioxide Saccharomyces cerevisiae breeding.
