摘要 本文研究活性较高的8901脂肪酶催化油脂水解制脂肪酸。确定了8901脂肪酶无专一催化性质,讨论了水解时间,脂酶浓度和温度等因素对反应的影响,并用色质谱(GC—MS)对产品脂肪酸进行了分析鉴定。 8901 lipase-catalyzed hydrolysis of oils and fats for making fatty acids was studied in this paper. The 8901 lipase with high activity was also proved to be no selectivity. The effects of concentration of lipase, reaction time and temperature were discussed,and the products of fatty acids were analyzed by GC-MS.
