用纤维素酶处理米糠,可将原料中的纤维物质水解成可溶性片断,其它的营养物质均被保留,通过正交试验确定酶解米糠的最适条件。其酶解液可直接用于制备米糠食品。
The enzymolysis of rice bran by cellu lase may turn a large amount of cellul ose into soluble pieces,and other nutritional components are kept.Premium working cond itions for the enzymolysis were determined by means of orthogonal ex periments.The enzymolysis liquid c an be used to manufacture foods from the rice bran.
