摘要
我国是面食品消费大国,因而面粉和面食品质改良剂发展很快,已列入GB2760的品种已达50~60种。随着国际对环境和健康以及食品安全问题的日益重视,回归大自然,崇尚绿色消费,已成为一种潮流,“天然营养多功能”是今后一个时期我国面食品添加剂的重点发展方向。
The quantity of consumption of flour products is a large number so that the flour quality improvers developed very quickly. Nowadays, there are about fifty to sixty kinds of flour quality improvers has been listed in Hygienic Standards for Uses of Food Additives (GB2760 - 1996). The problems of enviornment protection,people's health and food safety were paid attention to in recent years, natural, nutrient and functional food is very popular increasingly. This paper gave a discussion about the trend of the flour prodoct quality improvers.
