西红柿籽营养成分的分析

Nutritional Components Analysis of Tomato Seed

为了进一步开发利用新疆的西红柿籽资源,分析了西红柿籽的营养成分。西红柿籽含23 12%的油,19 60%的蛋白质,22 35%的总糖,0 208%的维生素E。还分析了西红柿籽的氨基酸和微量元素组成。西红柿籽油中含亚油酸51 34%。西红柿籽油的理化指标为:密度d2040 9367,碘值196 69gI/100g,折光指数n201 4626,皂化值190 29mgKOH/g,不皂化物8 26%。

To exploit the tomato seed resource of Xingjian g,the nutritional components of the tomato seed wer e analyzed.The seeds contain 23.12% oil,19.60% protein,22.35% total sugar,0.208% vitamin E.The amino acids composition and some trace elements of the seeds were also determined.The seedoil contains linoleic acid 51.34%.The relative densit y of the seedoil is d2040.9367,the iodine value is 196.69 gI/100 g,the refractive index is n201.4626,the saponification value is 190.29 mgKOH/g, and the unsaponifiable matter content is 8.26%.
