淮安菜是中国淮扬菜系的重要组成部分,具有深厚的文化积淀,在长期的历史发展过程中,形成了独特的美学风格。淮安菜崇尚朴质归真,善治本味,擅烹乡土菜,漫溢着浓浓的平淡、拙朴的美学风情;注重形式简约之美,注重寓意于形,寓情于形,兼得形意相合之美;有独特的淮白鱼和蒲菜系列名馔,更有名闻遐迩的全豆腐席、全鳝席、全羊席等,其美千姿百态,臻至和谐的美学最高境界。
Huaian Cuisine is an important component part of Chinese Huaiyang cuisine style, and has deep cultural sediments. In the long\|time course of historical development it has formed its own specific aesthetic style. Huaian cuisine advocates simple and unadorned nature and takes good care of original tastes. Its cooking staff are skilled in preparing the dishes of local flavor. Huaian cuisine is brimming with the aesthetic amorous feelings of both strong flatness and clumsy simplicity, attaching importance to the beauty in simple formality and putting the implied meanings and feelings in form to achieve the congenial beauty of form and meanings at the same time. Huaian cuisine is famous for its series of unique dishes made of Huai whitefish and cattail and distinguishing banquets providing widely renowned dishes completely made of bean curd, or eel, or mutton and so on. Their ever\|changing and fantastic presentation, perfection and harmony come to an aesthetic climax.
