摘要
振兴徽菜应采取的对策是:菜肴制作快速简便,菜品不断推陈出新;利用地区特色原料创造菜点品牌;改进不合理的烹调方式,注重营养保健;开展徽菜的整理研究工作,加强徽菜的宣传促销;以人为本,不断提高从业人员的业务素质。
In order to revitalize Anhui cuisine we should take the following corresponding measures: uninterrupted popularization of newly innovated dishes by way of fast, simple and convenient preparation; creation of famous dish brands by using distinctive local materials; more attention to the nutrition and healthcare by means of improving irrational cooking methods; strengthening the propaganda work and sales promotion on the basis of systematization and study of the materials related to Anhui cuisine; unceasingly improving the business qualification of engaged personnel in view of a man as a nonmenon.
