摘要
研究了Rhizopus34产生糖化酶、液化酶、蛋白酶的最佳培养条件 .利用Rhizopus34制曲的最佳培养时间为 3~ 4d ;在制曲过程中添加 5 %~ 10 %的玉米粉能显著提高 3种酶的活性 ;制曲和糖化过程中产生 3种酶的最佳pH为 5 .8;3种酶的最佳作用 pH值范围为 4 .6~ 5 .2 .
The optimal culture condition of Rhizopus34 produced saccharidase, a-amylase and proteinase was reported in this paper. The optimal culture time to make use of Rhizopus34 in producing leaven was 3~4 days.5%~10% of powdered-maize in medium could obviously enhance the activity of saccharidase, a-amylase and proteinase. The optimum pH of producing saccharidase,a-amylase and proteinase in producing leaven and saccharifing was 5.8. The optimum pH range of the reaction of saccharidase,a-amylase and proteinase was 4.6~5.2.
