“多粮型”白酒生产工艺在枝江大曲酒生产中的初步运用

摘要 根据市场需求,将“多粮型”工艺应用于枝江大曲酒生产中。以高粱、大米、糯米、小麦和玉米为原料,配料比依次为30%,22%,20%,18%和10%,用曲量25%,用糠量21%,入窖温度16~19℃,入窖淀粉14%~18%,入窖水分59%~61%,发酵期40d。结果表明,产酒总酯含量达4.52~4.67g/L,己酸乙酯含量2.20~2.45g/L,出酒率稍低于单粮型,使枝江大曲酒的多粮风格有了较大提升。多粮型白酒生产工艺较单粮型复杂,在实践中要掌握工艺条件,加强工艺控制。(小雨) In accordance to market requirements,“multiple-grains”liquor production technology was applied in the production of Zhi-jiang Daqu Liquor.Sorghum,rice,glutinous rice,wheat and corn were used as raw materials with charge ratio as30%,22%,20%,18%and10%respectively.The use quantity of starter,use quantity of bran,the temperature for pit entry,the amylum content for pit entry,the moisture content for pit entry and the fermentation time were25%,21%,16~19℃,14%~18%,59%~61%,and40d respectively.The production results indicated that the contents of total esters and ethyl caproate were4.52~4.67g /L and2.20~2.45g /L respectively,the liquor yield slightly lower compared by“single-grain”production technology,but liquor style promoted a lot.Because“multiple-grain”liquor production technology was more complicated than“single-grain”liquor production technology,the technicians should get the run of the technical points and strengthen technical control.(Tran.by YUE Yang)
