Structured lipid can be obtained as the modified lipid from traditional oil and fats by artificial means. It has many nutritional properties such as easy absorption, improving immune ability, and lessening the risk of cancer 、 obesity and thrombosis, structured lipid is a healthy lipid that is better for patient, elderly and others. Structured lipid can be produced by chemical means or by lipase, the latter has more advantage.
