摘要 结构化脂质是传统油脂经化学或酶方法进行改造之后而获得,具有易吸收,提高免疫力,减少癌症、心血管疾病、肥胖症的得病风险等优点,是适用于病人、老年人及正常人的一种健康脂类。结构化脂质可用化学方法或酶法生产,而后者具有许多优点。 Structured lipid can be obtained as the modified lipid from traditional oil and fats by artificial means. It has many nutritional properties such as easy absorption, improving immune ability, and lessening the risk of cancer 、 obesity and thrombosis, structured lipid is a healthy lipid that is better for patient, elderly and others. Structured lipid can be produced by chemical means or by lipase, the latter has more advantage.
