摘要
少数民族饮食文化一直是饮食文化学术界研究的热点。渝东南少数民族饮食文化历史形成经历了以农作物、采集物、捕猎物为主的饮食结构到以玉米、甘薯、马铃薯和大米构成的主食,肉食为副食的饮食结构的变迁过程,是地域生态、民族互动和国家秩序共同作用的结果。
The diet culture of minority nationality has been a hot research topic in the academic circle of the diet culture. Historical period in southeast Chongqing minority diet culture experienced a structure change process from the dominated crops,collection,and catching prey to corn,potato,sweet potato and rice the staple food and meat for non- staple food diet. The change is the result of the interaction of regional ecology,ethnic interaction and national order.
