摘要
西点食品品种繁多,外观漂亮,营养丰富,因而颇受现代人喜爱。然而许多西点食品受小麦粉烘焙品质的影响,制作出来后外观和口感均不够理想,直接制约了西点食品的发展。添加一定的添加剂可改善小麦粉的烘焙品质。
The baking food stands high in the modern people抯 favor for its various type, pretty appearance, and enrichment nutritions. However, most of the baking foods are affected by the wheat flour baking quality, accordingly the outlook and eating quality of the products are not perfect, which handicaped the development of the baking food. Some improver play important roles in enhancing the baking quality of the wheat flour.
