摘要
天然矿泉水的卫生问题是目前矿泉水产品质量中最突出的问题。天然矿泉水生产中容易出现的沉淀、杂质(异物)和微生物危害,不但严重影响产品的声誉,而且给厂家造成巨大的经济损失。文章从天然矿泉水的风险评估、微生物学问题、瓶装水的技术问题、国内外天然矿泉水的卫生检验标准以及卫生监控方法等方面得到关键控制点——微生物危害,同时,通过国内外检验方法的对比,找出天然矿泉水的合理检验方法及卫生监控措施。
Natural mineral water抯 sanitary is the most important problem in the quality of mineral water at the present. Precipitation, impurity and microbiological risk usually occur in the proceeding of natural mineral water. Not only deeply influencing the fame of products, but also bringing about great loss in economy of the factory. The article concludes the critical control pointmicrobiological risk from risk assessment of natural mineral water, microbiological problem, the technological problem of water in bottle, natural mineral water?sanitary standards inside the country and abroad and the methods of hygiene supervision. At the sametime, through the comparison of inspection methods in the country and abroad, we conclude the reasonable inspection methods and hygiene supervision measures.
