摘要
对L—肉碱的化学性质、食物中的含量、体内生物合成、缺乏及危害性、营养作用及其在功能性食品中的应用进行了阐述。
L-carnitine is a compound in animals body which relates to fatty acids metabolism. Its main function is as a carrier in ihe transport of long-chain fatty acids over the mitochondrion inner rnembrance where it promotes fatty acids β- oxidation. In this paper, L-carnitine's chemical properties, content in food, biosynthesis in body, deficiencies, nutrition, and it' s application in functional food were discussed.
