摘要
采用浊度法对适用于豆乳体系的乳化剂进行了筛选并在此基础上选择了适宜的乳化剂用量。在试用的6种乳化剂中,CentroLene S的乳化能力和乳化稳定性最佳,其最适添加量为m(乳化剂):m(总油量)=1:15。采用激光光散射法对不同均质条件下所得豆乳浆料的乳化状态进行了评价,结果表明,当一次均质压力40 MPa,二次均质压力20 MPa时,浆料的平均粒径D_(0.5)为0.338μm,且粒径呈窄的正态分布。
Proper emulsifier for soy slurry was selected by turbidimetric techique. Among the six emulsifiers that were tried, CentroLene S had the highest emulsifying capacity(EC)and emulsifying stability(ES). The optimal usage Ievel of CentroLene S was selected by the same method, it was determined as l : 15. Homogenizing parameters were optimized by comparing the droplet size distribution of resulting emulsions via laser scattering method. The best result was obtained when soy slurry was homopenized twice at 40 MPa (first stage pressure) and 20 MPa (second stage pressure), the D0.5 (average droplet size) of the emulsion thus obtained was 0. 338 μm.
