摘要
本文介绍了食物中微量元素生物利用的概念和评估方法 ;阐述了锌、铁、铜、镁、硒等微量元素的代谢情况及相关的影响其吸收代谢因素 ;着重综述了人体在微量元素吸收代谢方面的研究进展 。
This paper overviews the concept and evaluatingmethods on how to utilize biologically the trace elementsin food;elaborates the details about metabolism and somerelated influential factors on some trace elements,such as Zinc(Zn),Iron(Fe),Copper(Cu),Magnesium(Mg),Selenium(Se),etc,puts emphasis on reviewing the evolutional research on theabsorption and metabolism of the trace elements in humanbody,so it can be used for reference on how to make our meals rationally and effectively
