以榆树叶制备叶绿素铜钠的工艺条件和稳定性研究 被引量:4

摘要 由榆树叶提取叶绿素 ,经皂化、铜代及成盐反应制备叶绿素铜钠盐 ,研究探讨铜代反应最佳工艺条件 ,并对叶绿素铜钠的光稳定性、热稳定性、耐氧化性、耐还原性、耐酸碱性以及一些食品添加剂对该色素吸光度的影响等理化性质进行研究。结果表明 ,铜代反应最佳工艺条件为 :榆树叶粉与 10%硫酸铜溶液质量比为 1∶8,反应温度 6 0℃ ,反应时间 1h ,得率达 9.6 7% ,叶绿素铜钠耐热、耐光、耐还原性较好 ,耐氧化性较差。 The technology of preparing sodium-copper chlorophyllin from elm leaves was discussed. The coppering optimum technological condition was studied and the physical and chemical properties of the sodium-copper chlorophyllin including solubility, photostability, thermostabillity, resistance to oxidizing agent, reducing agent and pH value, and the effect of some food additives on absorbance property of the pigment solution were researched. The results showed that the optimal coppering reaction condition was as follow: the weight ratio of elm leaves powder to 10 % CuSO 4 was 1∶8, the reaction tempterature was 60 ℃, the reaction time was 1 h, the yield of the pigment was up to 9.67 %, and the sodium-copper chlorophyllin was very stable on heating, lighting, reducing and some food additives, but resistance to oxidation was poor.
