摘要
对云南元宝枫叶的营养成分进行分析测定。结果表明 ,元宝枫叶粗蛋白含量为 13 4 2 % ,氨基酸为 11 79g/ 10 0gDW ;必需氨基酸占氨基酸总量的 4 1 4 8%。SOD含量 10 4 4 0 μg/ gFW。VE含量16 13mg/ gFW。总黄酮含量 5 2 3% ,绿原酸含量 3 6 8%。矿质元素含量丰富 ,尤其是Ca、K等 ,并具有十分典型的高钾低钠特点。有较高的营养价值及医疗保健作用 ,开发前景广阔。
This paper dealt with analysis of the nutritional components of Acer truncatum leaves from yunnan province. The result showed that the leaves is rich in crude protein (13.42%)and in amino acid (11.79 g/100 g DW),containing 41.48%g/gFW of essential amino acid .SOD and Vitamin E of the leaf is 104.40 μg/g FW and 16.13 mg/g FW,flavonoid and chlorogcnic acid is 5.23% and 3.68%.Mineral elements is abundant, especially Ca, K. The content of K is very high, while the content of Na is very low. Thus the leaf is high nourishment and health protection value. The value of exploitment and usement is very high.
