摘要
综述了嗜热菌和极端嗜热菌产生的热稳定性的淀粉酶、纤维素酶、环糊精酶、木聚糖酶、几丁质酶、葡萄糖异构酶、蛋白酶等的研究进展及其在食品、化工、环保等方面的应用前景。
The biotechnological significance of heat-stable enzymes produced by thermophilic and extreme thermophilic microorganisms are discussed briefly. The polymer-degrading enzymes,such as amylases,pullulanases,cyclodextrin glycosyltransferases,cellulases,xylanases,chitinases,proteinases and glucose isomerases with potential use in food,chemical and pharmaceutical industries and in environmental biotechnology are focused on.
