金钱草中的天然抗氧化剂防止食用油酸败的研究 被引量:1

摘要 金钱草(报春花科Lysimachia Christimae Hance)为常见的中草药.对人体肝、胆的多种疾病有很好的疗效,同时具有无毒、价廉、分布广泛的特点.经抗氧性筛选试验,首次发现金钱草对防止食用油脂的酸败有很好的效果,迄今未见国内外报道.以0.2%溶剂萃取物添加在精炼棉油、菜油和猪油中,其抗氧化作用超过维生素E,达到或超过合成抗氧化剂BHT,如和增效剂维生素C、柠檬酸协同使用,则可以显著地超过BHT的抗氧化效能,急性动物试验证明无毒.质谱、红外光谱和核磁共振波谱鉴定,其抗氧性成分推断为脂溶性的酚类和酮类化合物. Lysimachia (Lysimachia Christiane Hance) is a common Chinese herbal medicine. It has very good curative effect on treatment to varied diseases of liver and gallbladder of human body. According to selective test of antioxidant activity, a very good effect of Lysimachia on preventing edible oils and fats from souring was discovered for the first time in the world. Addition of 0.02% Lysimachia extract to refined cottonseed oil, rapeseed oil and lard, its antioxidant activity was larger than that of tocopherols (VE), and its antioxidant activity also attained or surpassed that of synthetic BHT. It was used with synergists (ascorbic acid and citric acid), their antioxidant activity of the extract prominently surpassed that of synthetic BHT. No toxicity in Lysimachia extract was confirmed in acute toxicity text. Antioxidant compositions of extract was identified by infrared spectroscopy (IR), mass spectroscopy (MS) and nuclear magnetic resonance (HNMR), and the inference of composition was fat-soluble compounds of phenol or ketone.
