摘要 本试验研究挂面空调控温保鲜储藏技术。试验结果表明,挂面生产按照规定质量标准,用清洁卫生的硬纸箱包装,严把入库质量关,入库时脂肪酸值在20mgKOH/100g以下,水分在13.5%以下,粮温控制在20℃以下,可以从夏到冬安全保鲜储藏6个月,其感官质量、理化指标和食用卫生品质均符合商业部部标挂面质量标准规定要求,具有明显的社会效益。 The conservation technique of dried noodles was studied by airconditioning. The dried noodles processed on quality standard were pocketed in clean cardboard cases and stored. The value of fatty acid was below 20mgKOH/100g, below 13.5% in moisture content, below 20℃, when the dried noodles were stored. The result showed the noodles can be safely stored for 6 months (from summer to winter), the organoleptic quality, physical and chemical indicators and hygien quality accorded with the quality standard pyovided for the Ministry of Commerce.
