人工养殖与野生江鳕肌肉营养成分比较分析 被引量:13

摘要 为了比较野生与人工养殖江鳕肌肉营养成分差异,利用常规方法对野生(捕自新疆额尔齐斯河)和养殖江鳕(以鲟鱼颗粒饲料为食)肌肉的一般营养成分、氨基酸和脂肪酸组成进行测定。结果表明:野生和人工养殖江鳕肌肉中的粗蛋白质含量分别为18.9和17.8;粗脂肪含量为0.7和0.8;灰分含量为1.1和1.2;18种氨基酸总量为17.38和16.28,其中8种人体必需氨基酸含量为6.64和6.65,4种鲜味氨基酸含量为7.42和7.29;主要脂肪酸分别检出9种和6种。通过SPSS19.0软件分析,野生和人工养殖江鳕肌肉中营养成分总体组成比较接近(P>0.05),差异不显著。 In order to compare the wild river farmed cod muscle nutrients differences, using conventional methods of wild (captured from Irtysh) and farmed burbot (sturgeon pellets to feed) general muscle nutrients, amino acids and fatty acid composition were measured. The results show that:the river wild and farmed cod muscle crude protein content of 18.9 and 17.8, respectively;fat content of 0.7 and 0.8;ash content of 1.1 and 1.2;18 kinds of amino acids to 17.38 and 16.28 of the total, of which eight kinds of human essential amino acid content was 6.64 and 6.65,4 delicious amino acids content was 7.42 and 7.29;major fatty acids were detected in nine kinds and 6. By SPSS19.0 software analysis, wild and farmed burbot overall composition of nutrients in the muscle close to ( P>0. 05), the difference was not significant.
