鸡胸肉西式工艺加工探讨

摘要 鸡胸肉制品是以新鲜鸡大胸肉为原料,添加适量的调味料和辅料,经西式工艺的注射、滚揉、烟熏,蒸煮,烘烤成型、包装或散装形式在低温条件下保存、进入市场销售,直接食用或热处理的鸡肉产品。该产品是一种营养、方便、快捷的新型畜禽食品,可大批量生产,为未来鸡肉产品的深加工开辟了一条新路。 The fresh chicken breast meat was taken as raw material,and chicken breast meat product was made,and an amount of condiment and auxiliary material were added,and western style technology including injection,rolling,smoking,cooking,baking and packaging or bulking form was conducted,and it was kept in low temperature conditions,and it was sold in market,and this chicken meat product could be ate directly or by heat treatment. This product was a new type of livestock and poultry food which was nutritious,convenient and fast. It could be produced in large quantities,and it opened up a new way for the further processing of chicken product in the future.
