探讨了HACCP体系在烤鸭生产中的应用,应用HACCP原理分析烤鸭生产工艺中的潜在危害,确定了关键控制点,建立了HACCP计划表,提高了烤鸭生产过程中的质量安全,保证了食品的品质。
The application of HACCP system in production of roast duck was discussed. The principle of HACCP was used,and the potential hazards in production technology of roast duck were analyzed,and critical control points were determined,and the HACCP schedule was established. The quality safety in production process of roast duck was improved,and the quality of food was kept.
