摘要
卓资熏鸡是内蒙古自治区乌兰察布市卓资县的传统名食,制作加工有近百年的历史。卓资熏鸡原料要求严格,拥有传统的配方和独特的加工工艺,经历数百年发展而不衰。我们对卓资熏鸡工艺进行考究,从原料选择、屠宰工艺、白条鸡预处理、造型、卤制、熏制、包装等工艺进行全面技术规范,也是卓资熏鸡工艺的首次公开。
Zhuozi smoking chicken was a traditional famous food in Zhuozi County,Wulanchabu City,Inner Mongolia Autonomous Region.It had a history of nearly one hundred years of manufacturing and processing.The raw materials of Zhuozi smoking chicken were strictly required,and Zhuozi smoking chicken had a traditional formula and unique processing technology,and it had experienced hundreds of years of development.The technology of Zhuozi smoking chicken was conducted to study.The raw material selection,slaughtering technology,white chicken carcass pretreatment,modeling,bittern,smoking,packaging and other technology were conducted to do comprehensive technical standard.Technology of Zhuozi smoking chicken was also opened firstly.
