摘要 通过实验和数据分析,根据光散射原理,建立了利用散透比快速测量牛乳蛋白质的理论模型,推导了散透比与牛奶脂肪和蛋白质质量分数的函数关系,得到了它的标准曲面方程并进行了误差讨论.结果表明,利用本理论测量牛乳蛋白质相对误差<0.1%,重复性好,速度快,操作简单.为研制快速蛋白质测定仪提供了理论基础. Through numerous experiment and data analysis, the theoretic model of quickly measuring concentration of protein in milk by the ratio of scattering light to transmitting light is established, according to principles of light scattering. We derive the functional relationship of the ratio of scattering light to transmitting light with concentration of fat and protein in milk. The standard surface equation is obtained and the error is discussed as well. By using this theory, the results show high precision (error less than 0.1%), reliable repetition, fast speed and simple operation in measuring concentration of protein in milk. Our research provides the theoretic basis for developing the instrument of quickly measuring concentration of protein in milk.
