摘要
以牛血为材料 ,通过简单的分步盐析法 ,制备出牛血红蛋白 (Hb)结晶。经镜检及实验结果证明 ,该结晶构型均匀整齐 ,纯度较高。虽属高铁氧化型 ,但可以进行还原型、氧合型及氧化型等天然诱导体构型的调制 ,并在各种诱导体构型的色调特性、光谱学特性及氧合正协同效应特性等方面均与天然Hb诱导体相类似。因此 ,可以满足人们进行别构蛋白特性及食肉色调变化机理研究的需求。
The paper shows a simple method to prepare the crystals of cattle hemoglobin by salting out. The result of the microscopy check and test prove that the crystals are even, whole and higher purity. They are met-Hb, but they can be changed into various induction shapes. And the induction configuration have similar property in hue, spectroscopy, and positive synergism and so on with natural Hb. So the crystals could be used for the study of meat hue and allosteric proteins.
