摘要
通过对撞击机撞击前后的物料进行粒度分级、出粉率的测定和粉质的化验,讨论了撞击机对制粉效果的影响以及在不同撞击强度下撞击机对面粉品质的影响.实验结果表明:经过撞击后,大颗粒物料的数量大幅降低,小颗粒物料的数量大幅增加,中小颗粒的数量变化不大;前路心磨使用撞击机可大大提高出粉率,面粉灰分虽略有增加,但增幅不大;撞击强度大,面粉的内在品质略有降低.
The influence of striking detacher on flour milling properties were studied by determining the milling material granularity distribution,by flour yield determination and dough rheological test before and after using striking detacher.In different degree of striking,the influence of striking detacher to flour properties were studied.The results indicated that the amount of big granularity material decreased greatly after striking.The amount of small granularity material increased greatly after striking.In addition,the intermediate granularity material changed little after striking.Flour yield would be increased greatly for former stage reduction rollermill after using striking detacher,flour ash content would also be increased,but with small degree.In addition,with the bigger degree of striking,the flour quality would have certain decrease.
