摘要 大麦麦芽中非淀粉质多糖主要由阿拉伯木聚糖和β-莆聚糖组成。研究了大麦麦芽中可溶性非淀粉质多糖的制备方法,通过气相色谱法测定其单糖含量,并对其组成进行了讨论。多糖中总糖量为80.2%,中性糖为阿拉伯糖、木糖、葡萄糖和半乳糖,阿拉伯糖和木糖比(A/X)为1.09。 Non-starch polysaccharides from badey malt are composed of arabinoxylans and β-glucans.The preparation of water- soluble non -starch polysaccharides from barley malt was studied.Neutral sugar compositions of NSP were measured by gas chromatography and analyzed The content of total sugar in crude polysaccharides is 80.2% .Neutral sugar compositions are arabinose, xylose, glucose and galactose.The arabinose to xylose ratio is 1.09.
