摘要
啤酒泡沫性能包括起泡能力、泡沫外观、泡沫持久和泡沫挂杯等四个方面,它可以完整地反映啤酒的泡沫质量好坏。从生产工艺的角度详细地分析了啤酒泡沫性能差的原因,进而总结出了改善啤酒泡沫性能的方法。
The performance of beer bubble involves four aspects as bubbling ability, bubble appearance, bubble persistence and bubble adhrence to glass. It can reflect the quality of beer completely .The reason of poor performance of beer bubble was analized in detail from the process angle. And further,the methods of improving bubbling ability of beer was concluded.
