目前,食品安全问题已经成了社会发展中的一个重要主题,特别是非法使用甲醛的水产品和水发产品现象更加严重。这不仅降低了食品的营养价值,这也严重损害了消费者的利益和健康。因此,甲醛在各类水发产品中的含量问题引起了人们的广泛关注。为此,本文介绍了分光光度法、气相色谱法、液相色谱法、极谱法等方法检测甲醛的原理及优缺点。

At present,food safety has become an important issue in social development,especially the illegal use of formaldehyde in aquatic products and water-based products is more serious.This not only reduces the nutritional value of food,but also severely damages the interests and health of consumers.Therefore,the problem of formaldehyde content in water-based products or aquatic products attracts people’s attention.In this paper,the principle,advantages and disadvantages of formaldehyde detected by spectrophotometry,gas chromatography,liquid chromatography and polarography are introduced.
